Can the geometry of a pour over filter holder can influence the flavor of your coffee?

We want to figure out and design the ideal dripper for the most delicious pour-over coffee. We have designed a series of 3d-printed prototypes and want to determine the winner by testing.

When you think about what affects the flavor and profile of your coffee, you’re likely to consider brew ratio, grind size, water temperature, and water quality. But did you know that the shape of your filter can also impact the flavor of your coffee?

What other factors define an ideal filter? How does a coffee dripper have to look like in order to tell the coffee where and how to flow for the most delicious pour-over coffee?

IDEAS:

  • a special interior surface pattern, such as a spiral, could help to gently extract the coffee
  • interior ridges could pull the water through the dripper faster than gravity alone could
  • a double-walled coffee filter could reduce the temperature loss during filtering due to the thermal effect
  • structured exterior walls as insulation, which make it possible to hold the filter without burning your hands
  • spiral interior ridges for maximal coffee expansion

In the process of the form finding, we have designed different filters which differ in the following factors:

  • round / oval bottom
  • one / more holes than nozzle
  • smooth / structured inner wall
  • ridges / spiral structure

virtual vs reality

From the virtual preview to the 3d printed prototype: Since the ceramic mass has a pasty consistency and moves, the preview never corresponds to the actual 3d printed reality. Factors such as the wetness of the print mass or the printing speed have an influence on the print result. A soft mass in combination with a fast print speed leads to a dynamic print result, while a hard mass and a slow print speed lead to a static appearance.
